Flour supplies

I have been reporting from time to time on the bread flour situation and steps taken. On a parallel track, BH has been mindful of her regular flour supplies.

This week, for the first time in some weeks, Sainsbury's has had some self raising flour, 1.5kg rather than the 500g she would usually buy, but she was pleased to have it. A speciality brand, Green Dragon, seemingly intended for the Chinese community here. So what is it about Chinese food that requires special flour? Disregarding the fact that the script that can be seen bottom left on the bag is not Chinese at all. Eastern, possibly far eastern, but not Chinese.

Westmill is also a slightly misleading name, in the sense that it is not a flour mill at all, rather the name of an importer.from the Netherlands, as can be seen bottom right if you click to enlarge.

However, all is explained at reference 1. They started out supplying rice and flour to the oriental restaurant trade in 1988 and have grown a bit since, moving into all kinds of other products for that same sector. But not quite all as Green Dragon is not included in the flour section which seems to be all about chapattis.

I try Google and he comes up with reference 2. Which I shall read later, perhaps with a glass of something that warms.

PS: after something that warms: it all seems to be about gluten content and chlorine content.
