Yesterday evening saw the downing of the bottle of Riesling from Tunbridge Wells, noticed towards the end of reference 1. The 2017 Riesling called Rosacker from the Cave de Hunawihr. Very good it was too.
Taken with the higher grade chicken from Tesco's, cabbage, carrots and white rice. Followed by apple and blackberry crumble with custard. Followed by miniature mince pies from Rococo (of reference 2). At the price, I had been expecting fake mince pies made of some kind of chocolate, but they turned out to be more or less ordinary mince pies, just small. Perfectly eatable nonetheless.
For the first time in a while, I made proper gravy to go with the chicken, something which had once been something of a weekly ritual. Boiled up some celery, carrots and a large onion (with skin) for a few hours, adding a tomato (mainly for additional colour) towards the end. Strained the resultant stock into the pan in which the chicken had been roasted, having first drained the fat off. Use some of the fat to roux up some white bread flour. Stirred the debris in the pan into the stock, then added the stock back to the roux, ending up with a thickish brown sauce. Touched up by adding four black peppercorns, bashed in the wood, as directed by the better recipe books. Neither gravy browning, stock cube nor e-number in sight on this occasion. Very good it was too, far better than the overpowering goo served up as gravy in most public eateries.
