Dundee cake

It being getting on for six months since the last Dundee cake, noticed for a start at reference 1, and having decided that a full-on Christmas cake was not the thing, clearly time for another Dundee. BH in consultative role.

Radiation cook book, as last time.

Found an eight inch loose bottom tin so used that. On advice, greased the tin and put the grease proof lining paper in on top of that.

Granulated rather than castor sugar.

Five medium eggs. Brown, possibly woodland laid.

Forgot to get almonds, which I don't put on top in any case, having too much regard for my fillings. So used blanched hazel nuts instead, split down the seam, like split peas - which was a lot easier than splitting in any other direction.

Added the cherries towards the end, to avoid bashing them about too much in the mixing.

One teaspoon of baking powder, rather than one eighth of a teaspoon. 40ml of milk, rather than 5ml. This last on advice, the mixture being deemed a little too stiff with the first 20ml.

Preparation, about an hour. Into the oven at 140°C at 1555. We wait.
