The Dundee cake last noticed at reference 1 was finished earlier this evening, by way of dessert after our soup. A cake which has done very well, and may well be repeated in the not too distant future.
Rose from cake to consider the important matter of what 'pintadeaux en croûte' might be, their having a minor role in the current Maigret story, 'Maigret et l'Indicateur'. As it happens, the penultimate story, so I shall soon be going back to the beginning.
Sadly, I have to report that I have not really found out. A pintadeau seems to be a young guinea fowl and lots of people seem to do a pâté de pintadeaux en croûte - while some other people seem to cook an entire, adult guinea fowl, that is to say, a pintade, in a sort of pastry shell, illustrated left. Perhaps Mme. Maigret is doing things more the size of Cornish pasties; each one containing a small guinea fowl and providing one portion? Perhaps as sucking pig is to pig?
The good news is that I have come across references 2, 3 and 4. There are clearly Maigret nuts out there and clearly something to be pursued when we are back on the big island.
