A new pudding

Or possibly a new dessert, with the trouble here being that pudding sounds a bit too common and dessert sounds a bit too posh. But whatever we call it, it was very successful.

A plum variation of a sort of pudding we used to have quite often, a pudding called a pineapple up-side-down cake. Up-side-down because the pineapple is at the bottom of the cake while it is being cooked, which is then turned over when it is turned out.

An excellent rise on this occasion, particularly bearing in mind the fact that the cake has been turned over, possibly the result of using the finest sponge cake flour to be had from McDougall's. Probably McDougall's Self Raising Supreme Sponge Flour, which costs from Amazon about half as much again as my bread flour costs from Waitrose.

And an excellent pudding, with the red, tart plums complementing the yellow, sponge cake very well.
