Changing of the guard

This to report moving on from the second bag of Alto bread flour to the third. The sums looks suspiciously right, with the first bag, noticed at reference 1, being at about batch 556, while Monday's batch, mostly from the third bag was batch 589. 33 batches at around a kilo of white flour to the batch makes just over two bags.

Presently wondering if there is something different about the third bag, as the bread is browner and with a very good crumb. A noticeable improvement on batch 588. Was the changing of the guard a coincidence or the cause?

For some miller's reason, the bags are double skinned, brown inside and white outside, with the two skins joined top and bottom but not bonded together. While for some other reason, the bottom of the bag is sewn while the top is glued. Note the trusty oyster knife (from Conran's of Marylebone High Street, noticed from time to time) for opening, more neatly on this occasion that the last, and the trusty bulldog clip (probably from Ryman's of Epsom High Street) for closing. Bin bag in case of accidents.

The fourth bag arrived just a few minutes ago, so we now have plenty in hand against further lockdowns after Christmas. Remembered to bend my knees in good builder/NHS fashion when picking it up off the door step. 

As things stand now, I guess I will stick with Waitrose for their Canadian wholemeal and stick with Wrights of Ponders End for their Alto white. Buying in larger quantities does have its points.

Orange from Sainsbury's. A variety of navel orange, but inside more like a satsuma than one might expect. Good though. See reference 3.
